Chasing the sun

Our Shadow activity last Wednesday reminds me of the time when I came back to Vietnam for a 3-week holiday 2 years ago. With my best friends, we travelled to Dai Lanh beach in Phu Yen city, which is located on Vietnam's south-central coast. We took amazing shadow photos under the early sun. My friend also made a sunrise time-lapse video that I would love to share below. I remember he woke up at 4am to have his camera set up for the video. In the end, his effort paid off.




Now looking back, I am so happy that at least I went on that trip and captured those splendid, memorable moments with my dearest friends. Sooner or later, Covid will be over, yet there are some moments that will never come back. So, embrace every single moment of our lives and live it to the fullest.

Day 2 - Keep up the good work!

A heavenly Filipino cuisine experience

Today is my flatmate's birthday and I feel so lucky to try her homemade food. She did the food prep the night before and spent the whole morning cooking all of these amazing foods. Believe me when a Filipino cooks, they can feed the whole village. Pork and chicken wings were marinated the night before. We had spaghetti bolognese, creamy mushroom and cheese pasta, spring rolls, grilled chicken wings, grilled pork, BBQ pork, burger steak with creamy mushroom sauce and sour jackfruit soup with pork roast. The pasta and jackfruit soup turned out to be my favorite. Vietnamese also have our jackfruit soup but the Filipino version is quite different. It is sour due to the vinegar addition. The special thing about this soup is we cannot use ripe jackfruit because of its sweetness, instead, young unripe jackfruit leaves the soup a mildly fruity flavor that can be easily seasoned according to one's taste.
